OLD MAN SALTBUSH Atriplex nummularia. Grows over vast areas in the dry inland of Australia. It is drought tolerant and suitable for saline soil.

Saltbush has a wonderfully subtle and crisp taste, hint of rosemary, savoury, herby and salty flakes.

Great to use in spice blends, breads, pastas, guacamole, salsa, dukkahs, salad dressings, polenta, meatballs, pork, game meats and fudge. Used by First Nations peoples for ceremonies, flavour foods in ground ovens, and the soft foliage used as a bedding.
